TFE Hotels has added two dining venues inside its Adina hotels in Sydney. Shoreline Kitchen sits at Adina Sydney Darling Harbour. Bar Benevento sits at Adina Sydney Town Hall. Both fall inside the group's $100 million programme across its first-generation Adina apartment hotels in Australia, Europe and the United Kingdom.
Shoreline Kitchen began service with the Darling Harbour hotel's reopening on 3 August 2026. Bar Benevento opened in late September 2026.
The two operating patterns
Shoreline Kitchen seats 60 in the ground floor at 60 Lime St. The 114-room hotel stands at 55 Shelley Street, King Street Wharf. The kitchen serves the venue and supplies room service, poolside dining and catering for meetings and events across the hotel.
Bar Benevento takes the ground floor at 511 Kent St, on the corner of Kent and Bathurst streets. Its published service runs Monday to Friday from 7am to 3pm without a break. Weekend and public holiday service runs from 7am to 11.30am.
The Town Hall venue carries a weekday trade on a CBD corner. The Darling Harbour venue carries in-house demand from 114 apartment-style rooms and an event catering book.
What the F&B brief puts on one kitchen
Shoreline Kitchen runs one brigade across restaurant covers, in-room dining, poolside service and event catering. Breakfast, lunch and dinner sit inside that remit, with bar service.
Executive Chef Evan Prayogo runs the kitchen. Bar Benevento has its own brigade under Head Chef Tim Fisher, with Anthony and Julian Izzillo running the venue alongside Kosta Papanikitas.
Two venues, two cost structures
The Darling Harbour site carries three revenue lines from one kitchen: restaurant covers, in-house dining and event catering. The Town Hall site carries restaurant and bar covers across a weekday service week and a shorter weekend service.
A general manager comparing the two sites reads labour across the published service window and the in-house share of covers. Bar Benevento publishes 7am to 3pm on weekdays and 7am to 11.30am at weekends.
The flagship behind Shoreline Kitchen
Adina Sydney Darling Harbour reopened on 3 August 2026 after a multi-million-dollar refurbishment led by Bates Smart. Each room carries a kitchen and laundry. Adina Sydney Town Hall holds 144 keys after its own refurbishment.
Adina operates more than 40 properties across Australia, New Zealand, Singapore, Europe and the United Kingdom. The $100 million programme covers the first-generation apartment hotels, and the two Sydney venues carry the dining launch.
