The Savoy will open Beaufort Wine Bar this October. The bar carries more than 250 wines from 18 countries across six continents, and over 120 of them are served by the glass.
The wine programme
The Savoy lists the venue on its restaurants and bars page and places it on the level it calls the Savoy House of Wine. The property gives opening hours of Tuesday to Saturday, 5.00pm to late. Head Sommelier Romain Audrerie directs the programme. The list spans 50 years of vintages. It includes First Growth Bordeaux, Grand Cru Burgundy and mature Champagne alongside regional producers.
Half the cellar by the glass
Over 120 wines are poured by the glass. Coravin technology lets the team pour from a bottle without pulling the cork, which keeps older bottles open to a single glass. The Savoy says the approach opens 50 years of rare vintages to a single glass.
The glasses the list opens
The Savoy names a glass of Bâtard-Montrachet and a late-night pairing of Champagne and caviar. It names First Growth Bordeaux and Grand Cru Burgundy among the wines the programme pours by the glass.
The food alongside
The kitchen serves a produce-led sharing menu. A tableside carving service brings artisan cured meats and hand-carved Jamón Ibérico from a flywheel slicer trolley. The menu lists British cheeses, Hampshire trout with Dorset wasabi and Buddha's Hand, a black truffle cheese fondue and a caviar selection.
Grape-based spirits and cocktails
The spirits list is drawn from grape-based spirits. The bar pours wine-led cocktails built on Cognac, Grappa and Pisco.
What the venue adds to the property
The hotel's outlet list carries Beaufort Wine Bar beside the American Bar. Its named restaurants include Savoy Grill, Restaurant 1890 and the River Restaurant. Audrerie directs the wine programme.
The hotel describes black-and-gold interiors and a bespoke vinyl setup with bespoke-cut records. Live music runs through the evening. The bar sits inside the hotel on The Strand.
